This is a very popular side dish.It can be less or more spice as per your taste. It’s quite easy to make and certainly adds charm to your culinary art. This is a vegetarian stuffing but one could add minced meat,turkey,beef or even fish of your
choice.In our blog you could find a recipe for turkey kheema.Normally, one piece of stuffed green chilly is enough for a person. But I have found people hogging on more than one. So I leave it to you to decide. This time after giving you the list of ingredients for four chillies, I would like to demonstrate with pictures to make it easier for the new comers into the cooking field. I remember when I was a new comer to this field, and when we were more into reading magazines, such pictures tempted us to try the attractive recipes and for some reason, I could understand as well as felt it easier to follow. Videos are good but sometimes it’s difficult to see and follow while actually cooking the recipe simultaneously. At least I feel it that way and perhaps that’s why most of the people like to have cookbooks.
Ingredients:-
4 Green Chillies
1 Large Idaho Potato.Boil,skin and cut into small pieces.
2 tbsp. Finely cut Onion
2 tbsp. grated Ginger
1/2 cup Chopped Cilantro(coriander leaves)
1/4tsp. Red Chilly powder
1/4tsp. Black pepper powder
1/2tsp. Salt
3 tbsp. Canola oil
1 tbsp. Chick Pea powder.You could get it as Gram Flour
in the super market, if not, definitely in an Indian
grocery store. You may use Self rising all purpose
flour instead.
2 tbsp. White table vinegar. Add 1/4tsp. salt and
mix it well in a small bowl. Keep it aside.
Cooking Directions:-
Cut all the vegetables as shown in the pictures below;-
After cutting the green chillies as shown in the picture,cut the remaining small pieces into small pieces like the potato pieces shown in the picture.
Put 1/2 tbsp. of the vinegar and salt mixture into each Gr.chilly and turn it all around each Gr.chilly so that it gets quoted to the walls of the chilly evenly. Leave them aside.
Put oil in a suitable pan and put pan on medium heat for 2 minutes.
Add ginger and stir fry for a minute,
add potato pieces and stir fry till golden brown.
Add rest of the vegetables and stir fry
for 3 minutes.
Add Red chilly powder, Black pepper powder and salt and stir fry for another 3 minutes.
Now put the heat on lowest and pour all the vinegar mixture from each Gr.chilly by turning them one by one, upside down into the pan.
Mix it well by stirring for another minute and turn off the heat.
Take out this cooked mixture on a plate to cool down for 4-5 minutes.
I am giving down a picture to show how it looks while cooking.
Now stuff the Gr. chillies with this stuffing and cover the top of each by dusting the chick pea flour or self rising all purpose flour evenly as shown in the picture.
Wrap them individually with a lightly greased foil, keeping the top portion open
and making sure that the foil is closely wrapped around the chilly so that it gets baked properly. Put them on a suitable thin baking pan and broil them for 8-10 minutes in a toaster oven. For regular oven you will have to do it over 350 degrees heat for the same time. See how they could be wrapped in a fancy manner, looking like a fish in this picture.
It tastes great as an appetizer or as a side dish too. Tastes nice with any bread of your choice. Looks tempting too. The top picture shows the final product.
